Ground spice, a live-coal tandoor, and a family who moved their cooking to Henderson without apologising for any of it.
Bombay Indian Restaurant & Bar was opened by a family who grew up eating this food and got tired of explaining what it was supposed to taste like. The idea was narrow on purpose: cook the way it is cooked at home and in the roadside dhabas of Punjab and Maharashtra, and do not soften it for anybody.
Henderson turned out to be the right place for it — a city of people who moved here from somewhere else, many from places where good Indian food was a fifteen-minute drive rather than a project. Our dining room filled with families from Green Valley and Anthem, Strip chefs on their day off, and people who had never eaten Indian food and needed someone to walk them through the menu. We still do that walk-through, every night.
